Pumpkin Lentil Curry Recipe

Pumpkin is a type of winter squash and is loaded with vitamins, minerals, phytonutrients and fiber to help keep us healthy as we age.

There are so many reasons why you should be eating pumpkin especially as you age. Here are a few:

1. It is loaded with vitamin A, vitamin C, potassium, manganese, vitamin B2 and vitamin E. 

2. It is relatively low in calories because it is 94% water. Since it is nutrient dense and low in calories it can help you lose weight in midlife.

3. It has a high antioxidant content which can reduce your risk of developing chronic diseases. 

4. The high levels of vitamins and minerals can straighten your immune system so you get sick less often. 

5. It is high in carotenoids like beta-carotene, which your body turns into vitamin A which is great for your skin. 

6. It is high in fiber. Fiber slows the rate of sugar absorption into the blood, promotes regular bowel movements, and smooths digestion. A healthful fiber intake can also help reduce the risk of colon cancer.

Here is one of our favorite pumpkin recipes that is super easy to make. Make a big pot of this and enjoy for several days.

 

PUMPKIN LENTIL CURRY 

Ingredients:

15 oz can chickpeas (rinsed & drained)

½ cup onion (diced)

2 cloves garlic (minced)

2 large carrots (diced)

32 oz box vegetable broth

1 cup dry lentils

1 cup pumpkin puree

1 teaspoon curry powder

¼ teaspoon cayenne pepper

1 teaspoon turmeric

1 teaspoon salt

¼ teaspoon black pepper

13 oz can coconut milk (full fat)

 

Directions:

Slow Cooker:

  • Add all ingredients (except coconut milk and chickpeas) to a slow cooker.  Cook for 7-8 hours on low or 5-6 hours on high.
  • During the last hour of cooking, stir in coconut milk and chickpeas.  

 

Instant Pot:

  • Add meal bag contents, spice packet, chickpeas, and vegetable broth to Instant Pot.  Cook on manual high pressure for 4 minutes.
  • Manually release.
  • Stir in coconut milk to combine.
  • Adjust salt & pepper to your liking.
  • Serve with fresh fruit and salad.


Notes:

Serve alone or over rice.
