Apple Broccoli Salad

This meal makes a delicious plant-based lunch or dinner. If you want to add extra hormone-loving power to this dish then serve it over a bed of dark leafy greens!  

It is a dish that tastes better after sitting in your fridge for a few hours. 

Enjoy! 

 

Ingredients:

Salad:

4 cups broccoli (diced) 

3 apples (diced)

¼  cup red onion (diced)

½ cup craisins

½ cup sunflower seeds

Dressing:

¼ cup apple cider vinegar

½ cup olive oil

2 cloves garlic minced

1-2 tablespoon maple syrup

½ teaspoon salt

¼ teaspoon black pepper

 

Directions:

Add all salad ingredients to large bowl.

In a medium bowl whisk together all of the dressing ingredients.

Add the dressing to the salad and toss.

Chill until ready to serve.

 

Notes:

Serve alone or add to a bowl of mixed greens.
