Did you know that you can still enjoy occasional sweets while eating a whole-food plant-based diet (WFPB)? Even though a WFPB diet reduces the amount of processed sugar you are eating (because we all know how unhealthy processed sugar is for us) there are ways we can take an unhealthy dessert and make it healthier.
A perfect example of this is my Salted Snicker Bites. These bad boys are amazing and you can control how much chocolate you add to reduce the amount of processed sugar in the recipe. **See below for chocolate chips I recommend.*
Trust me when I say, you do not have to eat a WFPB diet to enjoy these! Every time I bring these somewhere everyone always asks for the recipe and they do not last long.

Salted Snickers Bites
Ingredients:
10-12 medjool dates (pitted)
2 cups peanut butter
1 cup chocolate chips (Enjoy Life Brand) (melted)
½ teaspoon salt
Directions:
Slice each of the dates in half horizontally and remove the pits. Don’t slice all the way through. Go just far enough so you can pull out the pit.
Stuff each date with some peanut butter.
Drizzle melted chocolate chips over each date.
Sprinkle salt on top of each date.
Place them on a parchment paper lined baking sheet.
Place in the freezer for 15 minutes.
Enjoy and store in refrigerator.
Notes:
You can substitute the peanut butter with almond butter or another nut butter, but it will change the taste of the recipe.
