Strawberries pack a nutritional health punch and should be a part of your regular diet. Here are some of the many health benefits:
Heart Health - they contain flavonoids and antioxidants that protect the heart.
Brain Health - they are rich in iodine, vitamin C, potassium and phytochemicals, which help maintain the proper functioning of the nervous system.
Immune Health - One cup of strawberries can meet your daily requirement of vitamin C.
Arthritis & Gout - The Arthritis Foundation recommends eating strawberries as they are abundant in antioxidants and detoxifiers, which help reduce gout and arthritis pain.
**Always purchase organic strawberries because berries are one of the heaviest sprayed crops.
Here is one of my favorite summertime salads. It is so easy to make and everyone always loves it. You can find a printable version inside our Recipe Library in our Monthly Membership.
Sweet Balsamic Strawberry Salad
Serves 2
Ingredients:
Salad:
2 cups fresh strawberries (chopped)
8 cups mixed salad greens
⅓ cup raw walnuts *
⅓ cup favorite vegan cheese *
2-3 tablespoons balsamic vinegar *
1 tablespoon pickled red onion (optional)
Directions:
Combine salad ingredients into a bowl and toss to combine. Drizzle balsamic dressing over top and serve.
Notes:
My favorite vegan cheese to use is Miyokos cashew cheese. Chive flavor.
My favorite balsamic vinegar is California Balsamic brand. I’ve only found it online through their website. It is thick and sweet and does not need any oil …. it’s delicious as is.
